It’s nearing summertime, and we’re here for the sun’s rays and all the Vitamin D our bodies can muster! What better way to appreciate the summer weather than by spending time outdoors, relaxing by the pool, and enjoying some seasonal recipes!
Sweet and savory, all the good stuff!
My personal favorite is Mediterranean Tuna Salad, and it’s quick and easy to make! The recipe calls for . . .
- 3 cans tuna
- 1 can cannellini beans
- 1 cucumber, sliced
- ½ red onion, finely chopped
- ½ cup kalamata olives, cut in half
- ¼ cup capers
- parsley/basil, finely chopped
- feta cheese crumbles, optional
Dressing: ¼ cup olive oil, ¼ cup red wine vinegar, 1.5 tbsp mayo, 1 tbsp agave or honey, 1 tbsp Dijon mustard, salt and pepper to taste, ½ tsp garlic powder, ½ lemon (juice)
Feel free to modify the recipe to your liking, but if you’re a tuna fan, you’ll absolutely love it!
Katie enjoys all things cold, fresh, and fruity! On the hottest of days, she withstands the heat with some Watermelon Salad. It’s refreshing and super simple to make! She dices the watermelon, tosses it with some fresh lime juice and mint leaves, and on occasion, she adds some sliced cucumber. After letting it chill in the refrigerator for about an hour, it’s time to enjoy!
